Charro Beans with Chorizo

This charro beans recipe is the most delicious you'll ever try. The classic beans accompanied by chorizo, sausage, bacon, and chicharrón with a spicy touch of jalapeño and cilantro will leave you enchanted with their excellent flavor.

  • 1 cup bacon, cut into small cubes
  • 1 cup chorizo, cut into cubes
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 cup sausages, diced
  • 3 Jalapeño chiles, chopped
  • 2 cups pinto beans, cooked
  • 2 cups bean broth
  • 1/2 cups pork rinds, chopped
  • 1/4 cups fresh cilantro, finely chopped
  • 1 pinch salt
  • 1 cup epazote, fried leaves, for garnish

  • Heat a deep pot over medium heat and fry the bacon with the chorizo until cooked. Add the onion and cook until translucent, then add the garlic, sausage, jalapeño peppers, beans, and broth. Cook for 10 minutes or until it starts to boil.
  • Add the chicharrón and fresh cilantro, season to taste.
  • Serve the beans on a plate and garnish with fried epazote leaves, serrano chili, and some chopped chicharrón. Enjoy.
