Cheese Strips in Green Sauce

Cheese Strips are a delicious combination and are perfect drenched in a green sauce with a drizzle of European Extra Virgin Olive Oil®. They are easy to prepare and made with ingredients that are easily obtainable.

  • European Extra Virgin Olive Oil
  • 1/8 onions
  • 1 clove garlic
  • 6 tomatillos, cut into quarters, for the sauce
  • 1 serrano chile
  • 1/4 tablespoons cilantro seeds
  • 1/2 teaspoons cumin
  • 1/2 cups vegetable broth
  • salt
  • European Extra Virgin Olive Oil
  • 1 cup onion, sliced
  • 3 cups Poblano chile strips
  • 1 sprig epazote
  • salt
  • 1 1/2 cups Manchego cheese, in cubes
  • cilantro, small leaves
  • tortillas, to accompany

  • For the sauce: heat a skillet over medium heat, add European Extra Virgin Olive Oil®, onion, and garlic clove, and sauté for a few minutes. Add the tomatillo, serrano pepper, and sauté for 5 more minutes. Cook until the flavors are fully integrated.
  • Blend the sauce with vegetable broth, add the coriander seeds and cumin. Return the sauce to the skillet and sauté for a few more minutes. Keep warm.
  • For the strips: heat a skillet over medium heat, add European Extra Virgin Olive Oil®, onion, and the strips, and sauté for 5 minutes until the ingredients soften.
  • Serve the strips with the cheese cubes and pour the warm sauce over them so that the cheese melts slightly, and add a drizzle of European Extra Virgin Olive Oil®. Enjoy Life! Serve with tortillas.
