Cheesy Gratinated Cauliflower

This delicious cauliflower dish is gratinéed with cheese and a tasty béchamel sauce. It makes a great side for meat.

  • 1 1/2 kilos cauliflower, cut into pieces
  • 4 tablespoons unsalted butter, cut into 4
  • 3 tablespoons flour
  • 2 cups cow's milk, hot
  • 1/2 teaspoons black pepper
  • 1/4 teaspoons nutmeg
  • 3/4 cups Gruyère cheese, grated
  • 1/2 cups Parmesan cheese, grated
  • 1/4 cups breadcrumbs

  • Preheat the oven to 375 F or 190 degrees.
  • Cook the cauliflower in pieces in a large pot filled with boiling salted water for 5-6 minutes. The cauliflower should remain firm but cooked.
  • In a pot, melt 2 tablespoons of butter. Once melted, add the flour and stir constantly with a whisk for 2 minutes. Gradually add the milk until the sauce thickens. Season with 1 teaspoon of salt, pepper, nutmeg, 1/2 cup of gruyere cheese, and parmesan cheese.
  • Place some sauce in a pyrex dish and add the cauliflower (drained). Pour the rest of the sauce on top.
  • Mix the breadcrumbs with the remaining gruyere cheese (1/4 cup) and sprinkle on top. Melt the remaining 2 tablespoons of butter in the microwave and drizzle on top. Season with salt and pepper.
  • Bake for 25-30 minutes until the top is golden brown.
  • Serve hot.
