Cook the cauliflower in pieces in a large pot filled with boiling salted water for 5-6 minutes. The cauliflower should remain firm but cooked.
In a pot, melt 2 tablespoons of butter. Once melted, add the flour and stir constantly with a whisk for 2 minutes. Gradually add the milk until the sauce thickens. Season with 1 teaspoon of salt, pepper, nutmeg, 1/2 cup of gruyere cheese, and parmesan cheese.
Place some sauce in a pyrex dish and add the cauliflower (drained). Pour the rest of the sauce on top.
Mix the breadcrumbs with the remaining gruyere cheese (1/4 cup) and sprinkle on top. Melt the remaining 2 tablespoons of butter in the microwave and drizzle on top. Season with salt and pepper.
Bake for 25-30 minutes until the top is golden brown.
Serve hot.
