Chickpeas with Pine Nuts

To prepare something different as a side dish, from Spanish cuisine to your table, you will have a delicious dish with these chickpeas with pine nuts.

  • 250 grams chickpeas legumes La Asturiana®
  • 1 leek
  • 2 carrots
  • 40 grams pine nuts
  • 4 tablespoons olive oil

  • The chickpeas soaked the day before are cooked in boiling clean water with a pinch of salt (discard the soaking water and rinse the chickpeas)
  • In that pot with boiling water, add the leek cut into thick slices and the carrots also cut into thick slices.
  • Let it cook for 2 hours on low heat in a regular pot and about 30 minutes in a pressure cooker.
  • Once the chickpeas are cooked, add the pine nuts and let the legume cook with the pine nuts for another 10 minutes.
  • Serve in individual containers accompanied by the chickpeas, pine nuts, leek, and the carrots cooked with the chickpeas.
