Preparation
The chickpeas left to soak the previous day, we cook them with clean water boiling with a pinch of salt (we throw the water of the soaking and wash the chickpeas)
In that pan with boiling water add the leek cut into thick slices and the carrots also cut into thick slices.
Let cook for 2 hours over a low heat in a regular pan and about 30 minutes in a fast pot.
Once cooked the chickpeas add the pine nuts and let cook the legume with the pine nuts for another 10 minutes.
We serve in individual containers accompanied by chickpeas of pine nuts, leeks and carrots cooked with chickpeas.
