A delicious aromatic rice with a fresh cilantro sauce. This recipe will be the perfect side dish or starter for a very Mexican meal. A perfect accompaniment for chicken or fish dishes. You choose what to pair it with.
In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the green onion and 1 clove of garlic and sauté for 2 minutes. Add the rice and cumin and cook for 1 more minute. Add 3 cups of chicken broth and allow it to come to a boil. Cover, reduce the heat, and cook until the rice is ready and all the water is absorbed.
Meanwhile, make the cilantro sauce by blending the cilantro with the remaining 1/2 cup of chicken broth, 1 clove of garlic, and salt and pepper to taste.
Mix the sauce with the rice and serve.
