Corn with Lime and Chili

This recipe for corn with lime and chili is the traditional one eaten in Mexico. Prepare this corn and add a little chili powder to give it more flavor.

  • 8 ears corn
  • 4 tablespoons piquín chile
  • 4 limes
  • 1/2 cups mayonnaise
  • 1 cup queso fresco, crumbled

  • Prepare the grill over medium heat.
  • Take the corn and open the leaves, season the corn with salt and pepper, remove the brown threads, and close the leaves again.
  • Grill the corn until well cooked (approximately 10 minutes).
  • Let the corn cool for at least 10 minutes.
  • Prepare the corn to taste, with lime, mayonnaise, chili to taste, and fresh cheese.
