This recipe for corn with lime and chili is the traditional one eaten in Mexico. Prepare this corn and add a little chili powder to give it more flavor.

4 tablespoons piquín chile
4 limes
1/2 cups mayonnaise
1 cup queso fresco, crumbled

Prepare the grill over medium heat.
Take the corn and open the leaves, season the corn with salt and pepper, remove the brown threads, and close the leaves again.
Grill the corn until well cooked (approximately 10 minutes).
Let the corn cool for at least 10 minutes.
Prepare the corn to taste, with lime, mayonnaise, chili to taste, and fresh cheese.
