Creamy Chayotes

Enjoy this recipe for creamy chayotes with vegetables, seasoned with garlic powder, with a touch of cilantro and topped with mozzarella cheese. You won't be able to resist!

  • 3 chayotes, peeled
  • water
  • salt
  • 1 cup deli ham, diced
  • 1/2 cups peas, blanched
  • 1/2 cups corn kernel
  • 1/2 cups carrot, cooked and diced
  • 1 tablespoon cilantro, finely chopped
  • 1 tablespoon garlic powder
  • salt
  • pepper
  • 1 1/2 cups Oikos® Protein Greek Yogurt
  • 1 cup fresh Mozzarella cheese, sliced

  • Cut the chayotes into medium cubes on a cutting board and then cook them for 5 minutes. Drain and set aside.
  • Mix the ham, peas, corn kernels, carrot, cilantro, chayotes, garlic powder, and Oikos® Greek Yogurt Protein in a bowl. Mix until fully combined.
  • Pour the mixture into a baking dish, add the slices of mozzarella cheese, and broil for 5 minutes.
  • Serve it accompanied by a delicious beef steak.
