Creamy Mushrooms

  • 2 orange bell peppers, roasted and cleaned
  • 2 tablespoons ground chipotle chile
  • 2 cups Oikos® Protein Greek Yogurt
  • 1/2 cups vegetable broth
  • salt
  • 4 cups button mushrooms
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 tablespoon garlic, finely chopped
  • 2 guajillo chiles, cut into strips
  • pepper
  • parsley, finely chopped

  • Blend the peppers, chipotle, Oikos® Greek Yogurt Protein, and vegetable broth. Season with salt and pepper. Set aside.
  • On a board, cut the mushrooms in half. Set aside.
  • In a skillet over medium heat, melt the butter, then add the olive oil and garlic. Sauté for 2 minutes, add the mushrooms, the strips of guajillo chili, and cook for 10 minutes or until ready.
  • Pour the pepper sauce over the mushrooms and cook over low heat for 5 minutes.
  • Sprinkle with parsley and serve with a delicious fish fillet.
