Creamy Spinach

  • 2 tablespoons butter
  • 3 tablespoons onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 3 cups spinach, cut into strips
  • 1 cup Oikos® Protein Greek Yogurt

  • 1/2 cups Parmesan cheese, grated

  • Heat the butter in a skillet over medium heat, sauté the onion until slightly transparent, add the garlic and sauté for 1 more minute.
  • Add the spinach and cook for 2 minutes over low heat, pour in the Oikos® Greek Yogurt Protein, season with salt and pepper, remove from heat and add the parmesan cheese.
  • Serve in a ramekin and accompany with a roasted chicken breast.
