Fondue is a typical dish from Switzerland that consists of melted cheese served in the center with bread. In this recipe, the fondue is prepared with white wine and Madeira wine to give it a more complex flavor.

400 grams Gruyère cheese, grated
1/4 kilos Emmental cheese, grated
2 tablespoons cornstarch
2 1/2 cups dry white wine
2 cloves garlic
2 tablespoons lime juice
3 tablespoons madeira wine
walnuts, freshly grated nutmeg
2 baguettes, cubed
1/2 cups white wine

Stir the cheeses with the cornstarch.
In a pot, stir the white wine and garlic and bring to a simmer over low heat. After 5 minutes, remove the garlic and add the lemon juice.
Add the cheeses gradually to the wine, stirring to melt them.
Continue stirring in a figure-eight motion and add the Madeira wine, pepper, and nutmeg.
Transfer to a fondue pot and serve with baguette pieces around it.
