Delicious Red Rice

  • 2 tablespoons vegetable oil
  • 1 cup white rice, for the broth
  • 1 cup tomato
  • 1/4 onions, in quarters
  • 2 cloves garlic, for blending
  • 1 serrano chile, clean
  • salt

  • 1 1/2 cups vegetable broth
  • 1 tablespoon butter
  • 1/4 cups yellow corn kernels
  • 1/4 cups peas
  • 1/4 cups carrot, precooked, in small cubes

  • Wash the rice carefully to avoid breaking the grain and to remove excess starch.
  • Sauté the rice with a little oil until it is lightly golden.
  • Blend the tomato, garlic, onion, salt and pepper, vegetable broth, and green chili.
  • Add the tomato mixture to the rice by passing it through a strainer.
  • Add a small cube of butter to enhance the flavor and texture, add yellow corn kernels, peas, and the precooked carrot.
  • Cook until it comes to a boil, cover, reduce heat to low, and let cook for about 25 minutes.
