  • 1/4 onions
  • 1 clove garlic
  • 1 tablespoon chipotle chile in adobo sauce
  • 1 tomato
  • 1 cup pinto beans, cooked and with broth
  • 2 cups chicken broth
  • 1/2 teaspoons cumin
  • salt, to season
  • pepper, to season
  • vegetable oil
  • 1 cup fideo pasta, #2
  • 4 teaspoons sour cream, thick, for decoration
  • 4 teaspoons queso fresco, in cubes, for decoration
  • 1/2 avocados, in cubes, for decoration
  • 4 tablespoons pork rinds, crumbled, for decoration
  • 4 leaves parsley, for decoration

  • For the sauce, blend the onion with the garlic, chipotle pepper, tomato, beans with broth, chicken broth, epazote, cumin, salt, and pepper until you obtain a homogeneous mixture. Set aside.
  • In a saucepan over medium-low heat, heat the oil and fry the noodles until golden, stirring constantly to prevent burning, and remove excess fat if necessary.
  • Pour in the bean sauce and let it come to a boil. Cover and lower the heat, cooking until the noodles are cooked and the liquid has completely reduced.
  • Serve the noodles on plates and decorate with cream, cheese, avocado, cracklings, and parsley. Enjoy.
