Easy Mexican-Style Cauliflower Rice

  • 4 tomatoes, in quarters, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, without skin, for the sauce
  • 1/2 cups vegetable broth, for the sauce
  • 2 tablespoons avocado oil
  • 1/4 cups onion, finely chopped
  • 1 bag Eva® cauliflower bits, 454 g
  • 1 cup peas, precooked in hot water
  • 1 cup carrot, in medium cubes, precooked in hot water
  • 1 cuaresmeño chile, finely chopped
  • 1/4 bunches cilantro leaves
  • avocado, slices, for decoration

  • Blend the tomato along with the onion, garlic, and vegetable broth until fully combined. Set aside until use.
  • Pour avocado oil into a saucepan or rice cooker, heat over medium-low heat, and sauté the onion until it becomes translucent. Add the Eva® Cauliflower Bits and stir continuously, cooking for 2 minutes.
  • Add the blended mixture after passing it through a strainer (the liquid should be equivalent to the amount of Eva® Cauliflower Bits). Add the peas, carrots, cuaresmeño chili, salt, and pepper to taste; mix gently until combined. Once the liquid boils, add the cilantro leaves and reduce the heat; cover and cook for about 6 minutes. When you notice that the liquid has evaporated by 80 percent, it will be time to uncover and cook without a lid for 6 more minutes. Remove the rice from the heat.
  • Serve as a side dish and accompany with avocado slices.
