Eggplant garnish, excellent to accompany chicken or meat.

1 eggplant, large or 2 small
3 limes, squeeze the juice
1/4 teaspoons salt
1/4 cups olive oil
3 tablespoons black sesame seeds

Wash the eggplants, peel and cut into small strips, as small as possible
Place in a glass container, add lemon, oil, and salt
Mix and adjust the amount of salt if necessary
Stir and let rest in the refrigerator for at least one hour
Take out of the refrigerator before serving to serve at room temperature
Sprinkle sesame seeds at the time of serving
