Eggplant Garnish

Eggplant garnish, excellent to accompany chicken or meat.

  • 1 eggplant, large or 2 small
  • 3 limes, squeeze the juice
  • 1/4 teaspoons salt
  • 1/4 cups olive oil
  • 3 tablespoons black sesame seeds

  • Wash the eggplants, peel and cut into small strips, as small as possible
  • Place in a glass container, add lemon, oil, and salt
  • Mix and adjust the amount of salt if necessary
  • Stir and let rest in the refrigerator for at least one hour
  • Take out of the refrigerator before serving to serve at room temperature
  • Sprinkle sesame seeds at the time of serving
