Slice the eggplants lengthwise into 10 slices each. Place in a bowl of salted water and soak the eggplants for 20 minutes.
Rinse and dry the eggplants. Brush them with olive oil.
Heat a grill or pan and grill the eggplants for about 2 minutes on each side. Set aside. Chop the mint.
Mix the crumbled feta cheese with the chili to taste; if you prefer it mildly spicy, use very little chili. Also add the mint, lemon juice, and pepper.
Place about 2 tablespoons of the cheese mixture on each eggplant slice and roll up. Arrange on a platter with the seam side down to prevent them from coming apart.
