Rich aubergine rolls with a slight spicy flavor. It is an innovative way to prepare the eggplant, filling it with cheese, mint leaves and a little spice. Try them you will love them.

Ingredients

10 portions
  • 2 eggplants, big
  • 3 tablespoons olive oil
  • 1 red pepper, finely chopped
  • 1 corsage peppermint, chopped
  • 200 grams feta cheese
  • 1 lemon, its juice
  • black pepper

Preparation

Slice the aubergines lengthwise into 10 slices each. Put salted water in a container and soak the aubergines for 20 minutes.
Rinse and dry the aubergine. Brush them with olive oil.
Heat a grill or skillet and grill the aubergines for about 2 minutes on each side. Reserve. Chop the mint.
Stir the crumbled feta cheese, with the chili to taste, if you want a little spicy add a little chili. Also mint, lemon juice and pepper.
Spoon about 2 tablespoons of the cheese mixture over each eggplant slice and roll up. Arrange on a platter with the seam facing down so they do not fall apart.

PRESENTATION

You can decorate the plate with some mint leaves
