Rich rolls of eggplant with a light spicy flavor. It is an innovative way to prepare the eggplant, filling it with cheese, mint leaves and a little spicy. Try them you will love them.

Ingredients

10 portions
  • 2 eggplants, big
  • 5 tablespoons olive oil
  • 1 Red chili pepper, chopped fine
  • 1 corsage Fresh mint, chopped
  • 200 grams feta cheese
  • 1 lemon, its juice
  • black pepper

Preparation

Slice the aubergines lengthwise into 10 slices each. Put salt water in a bowl and soak the aubergines for 20 minutes.
Rinse and dry the eggplant. Spread them with olive oil.
Heat a grill or pan and grill the aubergines as 2 minutes on each side. Reserve. Chop the mint.
Stir the crumbled feta cheese, with the chili to taste, if you want little spicy put very little chili. Also the mint, lemon juice and pepper.
Put about 2 tablespoons of the cheese mixture on each slice of eggplant and roll. Arrange in a platter with the union down so they do not fall apart.
