Eggplant Slices with Spices

  • 1 eggplant
  • 1/2 tablespoons cumin powder
  • 1/2 tablespoons curry powder
  • 1 pinch nutmeg powder
  • 1 pinch clove powder
  • 1/2 yellow onion, finely chopped
  • 1 clove garlic, finely chopped
  • vegetable spray for cooking
  • 1 olive oil

  • Grease the grill or skillet with vegetable spray and preheat it.
  • Slice the eggplant and place them on the skillet or grill. Flip the eggplant once and let it cook until tender and golden (about 5 minutes on each side). Remove from the grill and place on a plate.
  • In a deep bowl, mix the spices. In a skillet, heat the olive oil, add the spices, and cook for 30 seconds. Add the onion and cook until translucent. Add the garlic and season with salt and pepper. Cook for 4 more minutes.
