  • 1 cup Poblano chile, roasted, skinless and seedless
  • 1/2 cups whipping cream
  • 1 1/2 cups chicken broth
  • 1 tablespoon fresh cilantro

  • 1 cup fideo pasta, #2
  • 4 teaspoons sour cream, thick, for garnish
  • 4 teaspoons Cotija cheese, crumbled, for garnish
  • 4 tablespoons corn kernels, roasted

  • For the sauce, blend the onion with the garlic, the poblano pepper, the whipping cream, the chicken broth, the cilantro, salt, and pepper until you obtain a homogeneous mixture. Set aside.
  • In a saucepan over medium-low heat, heat the oil and fry the fideo until golden, stirring constantly to prevent burning, and remove excess fat if necessary.
  • Pour in the poblano sauce and let it come to a boil. Cover and lower the heat, cooking until the fideo is cooked and the liquid has completely reduced.
  • Serve the fideo on plates and garnish with sour cream, Cotija cheese, corn kernels, and fried corn tortilla. Enjoy.
