Slice the chicken or ham very thin and mix with cornstarch, wine, sugar, and soy sauce.
Beat the eggs with 2 tablespoons of milk and cook them in a hot pan with a little oil so that they resemble a thin crepe. Cut it into thin strips. Reserve.
Fry onion in 3 tablespoons of oil for 10 minutes, add chicken or ham and fry for 2 minutes. Remove from heat and keep warm.
In the same pan, add oil and fry the remaining vegetables, and when they are ready, remove from heat.
Heat a large pan, add 2 tablespoons of oil, add the rice and stir for one minute. Add soy sauce or salt and broth. Stir for 2 more minutes.
Add the onion and chicken or ham, eggs, and vegetables, and mix carefully. Serve hot.
