Green Beans with Pine Nuts

A perfect combination is this side dish of green beans with pine nuts, so you can enjoy it with your daily meals.

  • 2 tablespoons olive oil
  • 50 grams pine nuts
  • 1 teaspoon pimentón
  • 1/2 onions, finely chopped
  • 1 clove garlic
  • pepper, to taste
  • 1/2 limes

  • Heat the oil in a skillet and fry the pine nuts for one minute or until golden, stirring constantly; remove them from the skillet, let them drain on paper, and set aside.
  • Trim the green beans and cook them in water for 5 minutes or until they are firm but crisp. Let them drain in a colander.
  • Sauté the onion in a skillet for 5 to 10 minutes or until soft, add the garlic, and sauté everything for another 30 seconds. Add the green beans to the skillet and heat for 3 minutes, mixing them with the onion and garlic. Season with salt and pepper to taste.
  • Transfer the mixture of green beans to a platter, drizzle it with lemon juice, and toss. Sprinkle the previously toasted pine nuts and dust with paprika. Serve hot.
