Grilled Zucchini with Goat Cheese

3 zucchinis, sliced
1 tablespoon olive oil
1/8 teaspoons salt
50 grams goat cheese
1 tablespoon parsley
1/2 teaspoons lime juice
2 cups spinach
1/3 cups basil

Preheat the grill, or a grill pan to medium heat.
Cut the edges off the zucchini and brush the zucchini slices with olive oil. Sprinkle with salt and pepper.
Place on the grill for about 4 minutes per side until tender.
In a bowl, combine the goat cheese, parsley, lemon, and mix with a fork.
Put 1/2 teaspoon of the cheese mixture about 2 cm from the edge of the zucchini slice. Place spinach leaves and a small basil leaf on top.
Roll up and place the seam side down on the plates.
Repeat the same step with the other zucchini slices.
