Grilled Zucchini with Goat Cheese

A light dish of zucchini rolled with goat cheese, parsley, and basil. It only has 80 calories!

  • 3 zucchinis, sliced
  • 1 tablespoon olive oil
  • 1/8 teaspoons salt
  • 50 grams goat cheese
  • 1 tablespoon parsley
  • 1/2 teaspoons lime juice
  • 2 cups spinach
  • 1/3 cups basil

  • Preheat the grill, or a grill pan to medium heat.
  • Cut the edges off the zucchini and brush the zucchini slices with olive oil. Sprinkle with salt and pepper.
  • Place on the grill for about 4 minutes per side until tender.
  • In a bowl, combine the goat cheese, parsley, lemon, and mix with a fork.
  • Put 1/2 teaspoon of the cheese mixture about 2 cm from the edge of the zucchini slice. Place spinach leaves and a small basil leaf on top.
  • Roll up and place the seam side down on the plates.
  • Repeat the same step with the other zucchini slices.
