Hasselback Potatoes

Prepare these delicious bacon and cheddar cheese stuffed potatoes, which are super crispy, tender, and very easy to make. Best of all, you don’t need many ingredients; you can't miss them.

  • 4 potatoes, large
  • 2 cloves garlic, finely chopped
  • 90 grams butter
  • 4 pinches salt
  • 2 pinches pepper
  • 12 slices smoked bacon
  • 1 cup cheddar cheese, in thin slices
  • 2 tablespoons Parmesan cheese, shredded
  • 1 tablespoon chives, chopped, for garnish

  • Preheat the oven to 200°C.
  • Cut the base lengthwise of the potatoes, so they stand without any problem. Using a sharp knife, make cross cuts along the potato, without reaching the bottom.
  • Brush the potatoes with chopped garlic and insert slices of butter into the cuts. Season with salt and pepper. Wrap each potato in aluminum foil.
  • Place on a baking sheet and bake for about 1 hour or until they are tender.
  • Remove from the oven and place the bacon and slices of cheddar cheese between the layers. Sprinkle with parmesan cheese and broil in the oven for about 10 minutes.
