How to make tostones?

  • Remove the peel from the plantain with a knife, then cut off the ends and make a crosswise cut to remove the peel more easily. Then, cut the pulp of the plantain into 5-centimeter long pieces; repeat until finished and set aside.
  • Heat enough vegetable oil in a deep skillet so that it covers at least half of each portion of plantain. Fry the portions well for about 8 minutes, always at medium-low temperature, to avoid burning the oil and making the plantains too brown. Remove from the oil and drain on a rack; this will help the plantains not get soggy from the moisture that the absorbent paper retains when draining.
  • While still warm, flatten each portion of plantain with a plate on a cutting board or flat surface, there's no need to use plastic bags; you'll see how easy it is, just do it firmly to give it a sufficiently large size.
  • Return the flattened plantain to fry in the same oil you used until it has a golden color. Remove the tostones from the oil and drain on absorbent paper. Season with salt immediately and that's it, enjoy these tostones as a side dish or appetizer by pairing with the sauce of your choice.
