Korean Poke Bowl

  • 1/4 cups Inés® Extra Virgin Sesame Oil, for the marinade
  • 1 cup soy sauce, for the marinade
  • 2 tablespoons chili paste, for the marinade
  • 2 tablespoons raw sugar, for the marinade
  • 1 tablespoon garlic, finely chopped, for the marinade
  • 2 tablespoons cornstarch, finely chopped, for the marinade
  • 1 tablespoon ginger, finely chopped, for the marinade
  • 4 cups chicken breast, in medium cubes
  • 2 tablespoons Inés® Extra Virgin Sesame Oil
  • 1 cup soy sauce, for the sauce
  • 2 tablespoons Inés® Extra Virgin Sesame Oil, for the sauce
  • 1 teaspoon ginger, finely chopped, for the sauce
  • 1/4 cups lime juice, for the sauce
  • 1 tablespoon honey, for the sauce
  • 1 tablespoon chile flakes, for the sauce
  • 1 cup cucumber, Italian, sliced
  • 1 cup pineapple, grilled, in small cubes
  • 1/2 cups red onion, pickled
  • 1 cup carrot, in thin strips
  • 1 cup chinese pea, cooked and shelled
  • 4 cups rice, steamed
  • sesame seeds, for garnish

  • In a bowl, mix the Inés® Extra Virgin Sesame Oil, soy sauce, chili paste, brown sugar, ginger, and garlic. In another bowl, pour a little of the sauce and the cornstarch and dissolve. Add this mixture to the sauce, incorporate the chicken, mix, and marinate for 30 minutes.
  • Heat the Inés® Extra Virgin Sesame Oil in a pan over low heat and cook the chicken for 15 minutes. Remove and set aside.
  • In a bowl, mix the soy sauce, Inés® Extra Virgin Sesame Oil, ginger, lemon juice, honey, and chili flakes. Set aside.
  • To assemble the Korean poke bowl: Serve the rice in a bowl, add the chicken, cucumber, pineapple, onion, carrot, and peas. Garnish with sesame seeds and serve with the sauce.
