In a medium-sized pot, bring the water to a boil over medium heat. Add the couscous and remove from heat. Cover and let the couscous cook in the boiling water for 5 minutes. The couscous should absorb all the water.
Fluff the couscous with a fork and add the onion and remaining ingredients. Serve.
