Lemon Couscous

This delicious couscous side dish is a great way to vary from traditional rice. The recipe is very fresh thanks to the lemon and parsley.

  • 1 1/4 cups water
  • 3/4 cups couscous
  • 1/2 onions, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons orange juice, fresh
  • 1 tablespoon lime zest
  • 1 tablespoon lime juice
  • pepper, to taste

  • In a medium-sized pot, bring the water to a boil over medium heat. Add the couscous and remove from heat. Cover and let the couscous cook in the boiling water for 5 minutes. The couscous should absorb all the water.
  • Fluff the couscous with a fork and add the onion and remaining ingredients. Serve.
