2 kilos yellow potato
1 corsage rosemary
1 teaspoon salt
1 teaspoon pepper
4 eggs
5 teaspoons extra virgin olive oil, extra virgin
1/4 cups flour

Boil the potato with the skin on for 20 minutes. Remove the skin and set the cooked potatoes aside in a bowl.
Finely chop the rosemary. Add it to the bowl along with the cooked potatoes.
Add salt and pepper. Mash the mixture until you have a very solid puree.
Add the previously beaten egg whites to the mixture. Mix the egg whites with the puree.
In a saucepan, heat the oil. On a flat plate, pour some flour.
With a tablespoon, take some of the mixture and flatten it with your hand to shape it into a patty. Dredge in flour and then into the oil.
