Light Potato Patties

  • 2 kilos yellow potato
  • 1 corsage rosemary
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 eggs
  • 5 teaspoons extra virgin olive oil, extra virgin
  • 1/4 cups flour

  • Boil the potato with the skin on for 20 minutes. Remove the skin and set the cooked potatoes aside in a bowl.
  • Finely chop the rosemary. Add it to the bowl along with the cooked potatoes.
  • Add salt and pepper. Mash the mixture until you have a very solid puree.
  • Add the previously beaten egg whites to the mixture. Mix the egg whites with the puree.
  • In a saucepan, heat the oil. On a flat plate, pour some flour.
  • With a tablespoon, take some of the mixture and flatten it with your hand to shape it into a patty. Dredge in flour and then into the oil.
