Peel the plantains. In a pot with water; add a pinch of salt.
Add the plantains to the boiling water; while the plantains are cooking, in a skillet with a little oil, fry the onion.
Once the plantains are ready, drain the water, mash the plantains (like a puree) and add the butter.
If you want to add a little more flavor, you can add a bit of the oil you used for the onion.
Add the grated cheese and onion. Mix and enjoy.
