Marinated Portobellos in Vinaigrette

You can use these mushrooms as a side dish or as a delicious snack.

  • 4 portobello mushrooms, large
  • 1/4 cups balsamic vinegar
  • 1/2 cups pineapple juice
  • 2 tablespoons fresh ginger, peeled
  • 1 tablespoon basil, fresh, chopped

  • First, clean the mushrooms and remove the stems, then place them cap side up on a plate.
  • In a bowl, mix the vinegar, pineapple juice, and ginger to make the marinade sauce. Pour the marinade over the mushrooms and cover them, letting them marinate in the refrigerator for one hour (turn them to ensure they are well marinated).
  • Spray a pan with cooking oil and grill the mushrooms over medium heat, turning them until they are tender and glaze the mushrooms with the sauce.
