1 red beefsteak tomato, or 3 ripe tomatoes
5 tablespoons onion, chopped
2 cloves garlic, chopped
4 tablespoons vegetable oil
1 cup white rice
1 cup water
1 carrot, chopped
1 cup mixed vegetables, (corn, peas, green beans) chopped
leaves fresh cilantro, fresh

Blend the tomato, onion, and garlic with a little water. This puree should fill a full cup.
In a pot, heat the oil and add the rice, stir until the rice is slightly golden, about 1 minute.
Add the tomato sauce (1 cup), the vegetables, cilantro, and the cup of hot water.
Once it boils, reduce to a simmer and cook until the rice is ready and the liquid has evaporated, about 10 minutes.
Remove from heat and let cool for 5 minutes, stir a little with a fork and the rice is ready to serve.
