Mexican Rice

With this recipe, you will learn how to make rice to perfection. It is a typical Mexican rice recipe with vegetables and cooked with tomato sauce.

  • 1 red beefsteak tomato, or 3 ripe tomatoes
  • 5 tablespoons onion, chopped
  • 2 cloves garlic, chopped
  • 4 tablespoons vegetable oil
  • 1 cup white rice
  • 1 cup water
  • 1 carrot, chopped
  • 1 cup mixed vegetables, (corn, peas, green beans) chopped
  • leaves fresh cilantro, fresh
  • chile

  • Blend the tomato, onion, and garlic with a little water. This puree should fill a full cup.
  • In a pot, heat the oil and add the rice, stir until the rice is slightly golden, about 1 minute.
  • Add the tomato sauce (1 cup), the vegetables, cilantro, and the cup of hot water.
  • Once it boils, reduce to a simmer and cook until the rice is ready and the liquid has evaporated, about 10 minutes.
  • Remove from heat and let cool for 5 minutes, stir a little with a fork and the rice is ready to serve.
