With this recipe you will learn how to make rice to perfection. It is a recipe for typical Mexican rice with vegetables and boiled with tomato sauce.

Ingredients

6 portions
  • 1 beefsteak tomato, or 3 mature Roma tomatoes
  • 5 tablespoons onion, chopped
  • 2 cloves garlic, chopped
  • 4 tablespoons vegetal oil
  • 1 cup White rice
  • 1 cup Water
  • 1 carrot, chopped
  • 1 cup mixed vegetable, (corn, peas, green beans) chopped
  • leaves fresh coriander, cool
  • to taste Chili pepper

Preparation

Blend the tomato, onion and garlic with a little water. This puree should fill a full cup.
In a saucepan heat the oil and add the rice, mix until the rice is lightly browned, about 1 minute.
Add the tomato sauce (1 cup), the vegetables, the cilantro and the cup of hot water.
Once it boils reduce to a simmer and cook until the rice is ready and the liquid evaporated, approximately 10 minutes.
Remove from the heat and let cool for 5 minutes, stir a little with a fork and the rice is ready to serve.

PRESENTATION

Using a typical clay pot is a picturesque way to serve Mexican rice.

Oh no! Yo tengo acá en mexico casi 2 meses y ha sido un trauma para mi cocinar el arroz, vi está esta receta y también la hice pero nada, ya estoy q me doy por vencida, le dije a mi esposo q sí es mexicano, q no iba a preparar más arroz :'(
