Mexican Zucchini

This is the best recipe for a classic and delicious Mexican zucchini dish. Juicy zucchinis with tomato, corn, bits of ham, and a touch of sour cream.

  • 3 tablespoons vegetable oil
  • 1/2 onions, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 3 tomatoes, finely chopped
  • 2 cups zucchini, cut into medium cubes
  • 1 cup ear corn, kernels
  • 1/2 cups deli ham, diced
  • 1 gram salt
  • 450 milliliters Lala® sour cream
  • 1 package Lala® panela cheese

  • Heat the oil in a medium pot over medium heat, fry the onion until it changes color, add the garlic, tomato, and cook for 5 minutes.
  • Add the zucchini and cook for 10 more minutes. Incorporate the corn kernels and ham, cook for 10 more minutes, and season.
  • Serve with Lala ® Sour Cream and Lala ® Panela Cheese.
