Mint Jelly

The traditional mint jelly that accompanies lamb. Very easy to make and very delicious.

  • 1 3/4 cups peppermint, chopped
  • 1 1/2 cups water
  • 3 1/2 cups sugar
  • 3/4 cups cider vinegar
  • 2 tablespoons lemon juice
  • 1 envelope liquid fruit pectin

  • Bring the water with the mint to a boil for 30 minutes. Allow to cool and strain.
  • Return the water to a pot over heat and add the sugar, vinegar, and lemon juice. Heat until it starts to boil.
  • Remove from heat and add the pectin. Mix well. Store in sterilized glass containers.
