The traditional mint jelly that accompanies lamb. Very easy to make and very delicious.

1 3/4 cups peppermint, chopped
1 1/2 cups water
3 1/2 cups sugar
3/4 cups cider vinegar
2 tablespoons lemon juice
1 envelope liquid fruit pectin

Low
Bring the water with the mint to a boil for 30 minutes. Allow to cool and strain.
Return the water to a pot over heat and add the sugar, vinegar, and lemon juice. Heat until it starts to boil.
Remove from heat and add the pectin. Mix well. Store in sterilized glass containers.
