Preparation
Boil the water with the mint for 30 minutes. Allow it to cool and strain.
Return the water in a pot to the fire and add the sugar, the vinegar and the lemon juice. Heat until it starts to boil.
Remove from heat and add pectin. Mix well. Store in sterilized glass containers.
