Mustard Rice with Vegetables

  • 2 tablespoons vegetable oil
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 cups rice
  • 3 tablespoons McCormick® mustard
  • 4 cups chicken broth
  • 1/2 cups carrot, in cubes
  • 1/2 cups broccoli, in small florets
  • 1/2 cups peas
  • 1/2 cups corn kernel, yellow
  • chives, for garnish

  • In a deep skillet, add the oil and cook the onion, garlic, and rice until it turns golden brown. Keep stirring to achieve an even color on all the grains.
  • Add McCormick® Mustard, mix, and then add the chicken broth and carrot.
  • Cover and cook on low heat for 20 minutes. Add the peas, yellow corn, and cook for 5 more minutes.
  • Serve hot, garnish with green onions, and enjoy.
