2 tablespoons olive oil
1 tablespoon coarse salt
pepper
1 clove garlic
2 limes

Preheat the oven to 180 degrees Celsius.
In a skillet, sauté the garlic and thyme in oil, then add lemon juice and salt.
Marinate the potatoes in olive oil with thyme, garlic, and lemon for 30 minutes.
Place in a pyrex dish with all the marinade and bake for 30-40 minutes until the potatoes are tender.
Serve.
