Potato and Cheese Soufflé

  • 2 tablespoons flour
  • 1 cup milk
  • 4 egg yolks
  • 1 tablespoon potato flakes
  • 1/2 cups Gruyère cheese, grated
  • 1/2 cups cheddar cheese, grated
  • 1/2 cups bacon, chopped and fried
  • 2 tablespoons chives, finely chopped
  • 1 tablespoon baking powder
  • 2 tablespoons whipping cream
  • 4 egg whites
  • Parmesan cheese

  • In a small pot over medium heat, melt the butter, add the flour, and stir with a spoon until dissolved, then add the milk and cook for 3 minutes. Remove from heat and set aside.
  • Add the yolks, dehydrated potatoes, cheese, bacon, green onions, baking powder, cream, and mix. Set aside.
  • In a bowl, beat the egg whites until they form stiff peaks. Set aside.
  • In a bowl, add the mixture and gradually fold in the beaten egg whites. Set aside.
  • In several small baking dishes, brush with butter and sprinkle with Parmesan cheese.
