Potato Croquettes

This recipe is a great idea for using leftover mashed potatoes from another dish. Potato croquettes turn out delicious!

  • 2 tablespoons cow's milk
  • salt
  • 1/2 teaspoons pepper
  • 1/2 teaspoons chives, chopped
  • 2 egg yolks, beaten
  • 3 tablespoons flour
  • 4 cups mashed potatoes, or mashed potatoes
  • 1 egg, beaten
  • breadcrumbs
  • vegetable oil, for frying

  • In a bowl, combine the mashed potatoes, milk, salt, pepper, chopped green onions, beaten egg yolks, and flour. Mix everything well and refrigerate.
  • Using a scoop, form balls from the potato mixture and dip them in the beaten egg, then coat with breadcrumbs.
  • Fry each croquette in a pan filled with hot oil until golden brown on all sides.
