This recipe is a great idea for using leftover mashed potatoes from another dish. Potato croquettes turn out delicious!

2 tablespoons cow's milk
salt
1/2 teaspoons pepper
1/2 teaspoons chives, chopped
2 egg yolks, beaten
3 tablespoons flour
4 cups mashed potatoes, or mashed potatoes
1 egg, beaten
breadcrumbs
vegetable oil, for frying

In a bowl, combine the mashed potatoes, milk, salt, pepper, chopped green onions, beaten egg yolks, and flour. Mix everything well and refrigerate.
Using a scoop, form balls from the potato mixture and dip them in the beaten egg, then coat with breadcrumbs.
Fry each croquette in a pan filled with hot oil until golden brown on all sides.
