This recipe is a great idea for using leftover mashed potatoes from another dish. Potato croquettes turn out delicious!

In a bowl, combine the mashed potatoes, milk, salt, pepper, chopped green onions, beaten egg yolks, and flour. Mix everything well and refrigerate. Using a scoop, form balls from the potato mixture and dip them in the beaten egg, then coat with breadcrumbs. Fry each croquette in a pan filled with hot oil until golden brown on all sides.
