Potato Gratin with Strips

This potato gratin includes strips and melted cheese on top. It is a great side dish for a roast meat.

  • 5 Poblano chiles, roasted, peeled and cut into thin strips
  • 1/2 kilos onion, cut into strips of 1 cm
  • 1 tablespoon oil
  • 1 1/2 kilos potato , large
  • 1 1/2 cups whipping cream
  • 3/4 cups whole milk
  • 1/4 cups grated cheese, for gratin

  • Roast the chiles, peel them, and cut them into strips.
  • Cook the onion in slices with a teaspoon of salt in a large pot over medium heat for 8 minutes, until browned.
  • Add the strips to the pot and turn off the heat.
  • Preheat the oven to 400 degrees with the oven rack in the middle.
  • Grease a baking dish with butter.
  • Peel the potatoes and slice them very thin.
  • Place the potato slices in the pot where the strips and onion were cooked.
  • Add the cream, milk, and 1 teaspoon of salt.
  • Stir everything well and place in the greased baking dish (a pyrex).
  • Bake for 45 minutes.
  • Remove from the oven and add grated cheese, then return to the oven for about 5 minutes until golden.
  • Let rest for 15 minutes before serving.
