Potato Roses

  • 3 potatoes, peeled and cut into medium cubes
  • 1 cup whipping cream
  • 1 cup butter, smooth

  • 1 teaspoon nutmeg
  • 2 cloves garlic, roasted
  • 1 egg
  • 1 egg yolk
  • 1 cup Parmesan cheese, grated

  • Heat a pot with water until boiling, add salt and cook the potatoes for 20 minutes. Mash them and set aside.
  • In a small pot, heat the cream, butter, add salt, pepper, and nutmeg, keep on the heat for 5 minutes. Pour this mixture into the reserved potatoes, add the garlic and in a processor, mash, add the Parmesan cheese, the egg, and the yolks, mix well. Transfer to a piping bag with a star tip and refrigerate for 10 minutes.
  • Shape the roses on a baking sheet lined with parchment paper and bake for about 15 minutes at 200 °C. Remove and let cool slightly.
  • Decorate with parsley and grated Parmesan cheese.
