1 kilo tomatillo, peeled
4 serrano chiles, or to taste
3/4 cups fresh cilantro, coarsely chopped
2 tablespoons lard
1 onion, finely chopped
1 kilo potato, medium cooked and peeled potatoes
salt, to taste

The tomatoes and chiles are boiled in water with a little salt.
They are left to cool slightly and blended with the cilantro.
Lard is heated and the onion is added to sauté, then the sauce is added and allowed to season for approximately 10 minutes.
The potatoes are added and cooked for about 5 more minutes, or until tender.
