Potatoes in Green Sauce

This recipe for potatoes in green sauce is ideal to accompany any Mexican dish.

  • 1 kilo tomatillo, peeled
  • 4 serrano chiles, or to taste
  • 3/4 cups fresh cilantro, coarsely chopped
  • 2 tablespoons lard
  • 1 onion, finely chopped
  • 1 kilo potato, medium cooked and peeled potatoes
  • salt, to taste

  • The tomatoes and chiles are boiled in water with a little salt.
  • They are left to cool slightly and blended with the cilantro.
  • Lard is heated and the onion is added to sauté, then the sauce is added and allowed to season for approximately 10 minutes.
  • The potatoes are added and cooked for about 5 more minutes, or until tender.
