Bacon and Green Onion Au Gratin Potatoes

1/2 cups bacon, finely chopped
2 cans potato, in cubes Del Monte® (430g each)
2 tablespoons fresh chives
1 cup whipping cream
1 teaspoon pepper
1 1/2 cups Manchego cheese, grated

Preheat the electric oven to medium temperature.
In a high heat skillet, fry the bacon. Drain on paper towels.
In the same skillet, remove excess fat and cook the potatoes until they take on a bit of color.
In a baking dish, place the potatoes, bacon, green onion, and pepper. Mix with the cream and sprinkle the cheese on top.
Bake for 5 minutes or until the cheese is melted. Serve immediately.
