Baked Baby Potatoes with Sour Cream and Chives

  • 1 kilo new potatoes
  • 1 cup sour cream
  • 1 bunch chives
  • 10 sprigs fresh thyme
  • 2 sprigs rosemary
  • 3 teaspoons sea ​​salt

  • Preheat the oven to 200° C.
  • Wash the potatoes thoroughly with enough water, dry them well, and place them on a baking tray. Add oil, sea salt, thyme, rosemary, and pepper. Mix everything perfectly, cover the potatoes with aluminum foil, and bake for 25 minutes.
  • After the time has passed, remove the aluminum foil and brown for an additional 10 minutes.
  • Finely chop the chives. Set aside.
  • Remove the potatoes from the oven and make a cross cut in each. Inside the cut, add a tablespoon of sour cream and sprinkle with chives.
