Baked Stuffed Potatoes

Try these delicious stuffed and baked potatoes with Bionda® Ricotta and a creamy sauce with bacon and green onion; everyone will love their flavor. Additionally, they are the perfect side for a barbecue.

  • 4 potatoes, boiled
  • 1/4 cups green onion, in thin slices, including the green part
  • 1/2 cups bacon, in thin strips and fried
  • 1/4 cups butter, in small cubes
  • 1/4 cups sour cream
  • 1 cup Bionda® cottage cheese
  • salt
  • pepper
  • 1 cup Manchego cheese, grated, for baking
  • Bionda® cottage cheese, for garnish
  • chives, finely chopped, for garnish

  • Cut the boiled potato in half horizontally with a knife. Remove the filling with a spoon, being careful not to reach the bottom and break the potato. Set the potato filling aside in a bowl.
  • Mix the potato filling, green onion, and fried bacon until well combined and a puree forms. Remember that you can use a fork to mash the potato.
  • Melt the butter in a hot skillet, add the potato filling, and cook for 3 minutes, mixing all the ingredients very well. Add the sour cream, Bionda® Ricotta, season with salt and pepper, then cook for 5 more minutes. Set aside.
  • Stuff the potatoes with the previous mixture and top with manchego cheese. Bake at 180 °C for 7 minutes or until golden brown.
  • Serve the baked stuffed potatoes on a board and garnish with Bionda® Ricotta and chopped chives.
