Beer Potatoes with Bacon

There will never be a better snack or side dish than a recipe with potatoes, but as we know how versatile this ingredient can be, we prepared a very original option: Beer Potatoes with Bacon recipe. These potatoes are the best choice for a barbecue afternoon or to accompany a juicy cut of meat. To cook this potato recipe, you have to fry them very well over low heat for a long time; this will give them a good texture without burning them.

  • vegetable oil, to blanch the potatoes
  • 2 kilos new potatoes, cut in half
  • 3 sprigs fresh rosemary
  • 1 head garlic, cut in half
  • 2 cups bacon, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 tablespoons shallot
  • 1/4 cups honey
  • 2 cups lager beer
  • 3 tablespoons butter
  • 1/4 cups Dijon mustard
  • fresh rosemary, for the sauce
  • salt and pepper

  • Heat a skillet over medium heat with the oil; when the oil is between 100°C and 120°C, immerse the potatoes and cook over low heat to blanch them, meaning they should brown and soften at the same time.
  • Add the rosemary and the head of garlic to flavor the oil. When the potatoes are cooked, remove and drain on paper towels.
  • Heat a pot over medium heat, cook the bacon until browned, add the garlic, shallot, honey, amber beer, butter, mustard, rosemary, and cook until you have a sauce. Season with salt and pepper to taste.
  • Serve the potatoes, pour the sauce on top, and garnish with fresh herbs.
