  • 1 kilo new potatoes
  • water
  • salt
  • 1 cup fresh cilantro, for pesto
  • 1 cup parsley, for pesto
  • 1 cup water
  • 1 cup ice cubes
  • 2 cloves garlic, for pesto
  • 1/2 cups olive oil, for pesto
  • 1/4 cups pine nuts, for pesto
  • 1/4 cups almonds, for pesto
  • 1/4 cups Parmesan cheese, for pesto
  • 1 teaspoon coarse salt, for pesto

  • Cook the potatoes in a pot with water and salt until they are soft and set aside.
  • Boil water in a pot and immerse the cilantro and parsley for a few seconds, remove from the boiling water and place them in a bowl with ice water to stop the cooking, drain and set aside.
  • For the pesto, blend the previously blanched leaves with the garlic, oil, pine nuts, almonds, Parmesan cheese, and coarse salt until you obtain a smooth pesto, set aside.
  • Heat a pan over high heat and cook the potatoes with the pesto until they are completely mixed, serve on a platter to share.
