Wash the potatoes, in a pot pour enough water and add them. Let them cook for 35 minutes, remove from heat, let cool and set aside.
Once the potatoes are cool, cut them into wedges and set aside.
Heat a deep pot or pan, add the oil, let it heat and add the potatoes.
Fry for 8 minutes or until you achieve your preferred level of golden brown.
Remove from the oil and place them on absorbent paper towels to remove excess fat.
In a bowl, add flour, paprika, garlic, salt, chicken broth, oregano, thyme, onion, and black pepper; mix the ingredients until well combined.
Add the cut potato wedges and coat them with the seasoned flour until well covered. Remove excess flour and let sit for two hours.
Return them to the pot and let them finish cooking until they are nicely golden.
