Place a pot over medium-high heat and add the butter and oil. Add the onions, salt, pepper, thyme, and sugar.
Fry over medium heat, stirring occasionally to combine all the flavors, until caramelized or lightly browned. Reserve 1/2 cup for the mashed potatoes.
Place the potatoes in the Express Pressure Cooker® over high heat and cover with water. Close the Express Pressure Cooker® and place the pressure regulator on it, place it on the stove over high flame for approximately 25 minutes or until a constant steam is released, then lower the flame to medium and cook for 10 minutes.
Remove the Express Pressure Cooker® from the heat, let it cool, remove the pressure regulator, open the Express Pressure Cooker® and it's ready!
The potatoes should feel soft when pierced with a fork. Drain and place the potatoes in a bowl. Mash with a potato masher until a rustic puree is achieved.
Add the cream and mix. Add the reserved caramelized onion and cheese.
