Express Mashed Potatoes with Gruyere Cheese and Caramelized Onion

Caramelized onions are an excellent option to accompany various dishes.

  • 1 stick butter, 90 g
  • 2 tablespoons olive oil
  • 4 onions, medium and cut into half moons
  • 1 1/2 teaspoons salt
  • 1 pinch ground pepper
  • 1 teaspoon fresh thyme
  • 2 tablespoons sugar
  • 1.5 kilos potato, with skin
  • 1 cup thick cream, warm
  • 2 cups Gruyère cheese, grated

  • Place a pot over medium-high heat and add the butter and oil. Add the onions, salt, pepper, thyme, and sugar.
  • Fry over medium heat, stirring occasionally to combine all the flavors, until caramelized or lightly browned. Reserve 1/2 cup for the mashed potatoes.
  • Place the potatoes in the Express Pressure Cooker® over high heat and cover with water. Close the Express Pressure Cooker® and place the pressure regulator on it, place it on the stove over high flame for approximately 25 minutes or until a constant steam is released, then lower the flame to medium and cook for 10 minutes.
  • Remove the Express Pressure Cooker® from the heat, let it cool, remove the pressure regulator, open the Express Pressure Cooker® and it's ready!
  • The potatoes should feel soft when pierced with a fork. Drain and place the potatoes in a bowl. Mash with a potato masher until a rustic puree is achieved.
  • Add the cream and mix. Add the reserved caramelized onion and cheese.
