Prepare the mashed potatoes as instructed on the box, and set aside covered to keep warm.
Sauté the sausages in a pan with a little olive oil, and remove them when they are lightly browned. Chop them into small cubes and add them to the mashed potatoes we made earlier along with the cheese, 1 tablespoon of olive oil, parsley, and season with salt and pepper to taste. Mix everything and set aside covered so the cheese melts with the heat of the preparation.
On a platter, we will assemble the taquitos. Take a slice of ham and fill it with 2 or 3 tablespoons of the mashed potatoes we made, and continue assembling the 12 taquitos.
Once the 12 taquitos are ready, decorate the top with dried basil and olive oil to taste.
